I thoroughly embrace the new meat substitutes on the way. I eat meat and I do feel guilty. And I do feel it’s wrong to kill animals on the scale we do. The “humane killling” will never happen as it’s too many of us on the planet. We need to eliminate the meat industry, and switching people to a substitute that tastes the same is the quickest and surest way to do it. You mention that we will miss the “humbling intimacy from meals where the animal’s death is deeply felt”. I’m sorry but that is absurd and backwards. People don’t feel intimate with the animal they killed. They want to eat it because it is tasty. If anything we are where we are because we don’t give a shit about animals. We need to fix that, and in the process we are also removing the very significant CO2 emissions and water consumption associated with red meat production specifically. I can’t wait until as a human race we look back to the day and say to our children: “I can’t believe we killed real animals back then”, just to make a burger
